Asian Cucumber Salad With Sesame

- 3 medium cucumbers peeled halved lengthwise seeded and cut on the diagonal 1/4" thick shopping list
- 1 tablespoon kosher salt shopping list
- 2 tablespoons rice vinegar shopping list
- 2 tablespoons toasted sesame oil shopping list
- 1/2 teaspoon granulated sugar shopping list
- 1/4 teaspoon hot red pepper flakes shopping list
- 1 tablespoon sesame seeds toasted in a dry skillet until golden brown shopping list
How to make it
- Toss cucumbers and salt in a large strainer or colander set over a bowl.
- Fill a gallon size zipper lock plastic bag with ice water and set the bag on top of cucumber slices.
- Drain for 1 hour.
- Meanwhile whisk vinegar, oil, sugar and pepper flakes together in a small bowl.
- Set dressing aside stirring occasionally until the sugar dissolves.
- Thoroughly rinse the cucumber slices under cold running water and pat dry with paper towels.
- Toss cucumbers with dressing and toasted sesame seeds then serve immediately.
