Portuguese Bean Soup Recipe

Ingredients
  • 1/2 lb. chorizo sausage, chopped
  • 1/4 c. of olive oil
  • 2 chopped carrots
  • 1 c. of chopped onion
  • 3 qts. of chicken broth
  • 1 1/2 tbsp. cayenne pepper
  • 1 (15 ounce) can of drained kidney beans
  • 1/2 c. tomato paste
  • 5 chopped stalks of celery
  • 5 chopped tomatoes
  • 3 small potatoes, peeled and the chopped
  • Add salt and pepper to you individual taste

Directions
  1. You will first add sausage to a large pan over medium flame.
  2. Cook the sausage utnil brown.
  3. You will need to drain the grease off the sausage then crumble the sausage with your fingers.
  4. Next you will saute the carrots, onion and celery in a large pot over medium flames.
  5. Once the veggies are tender, add the tomatoes, potatoes, kidney beans and the broth.
  6. After this has come to a boil, add a dash of cayenne pepper and the tomatoe paste.
  7. You will then reduce the flame to low and let it simmer for around 20 min.
  8. Just before serving, add the sausage.
  9. Use salt and pepper according to your individual taste.

I love the sound of this one--it's nearing winter here so any soup recipes are most welcome! I love the spiciness of chorizo, so I'm gonna make this one soon!


I love chorizo and can not wait to try this recipe.Plan on taking it to Maine to visit family at the end of Sept.

Try using Linguica (Portuguese sausage) in place of chorizo. This is how my Portuguese family made this dish. Thanks for posting this recipe...it reminded me to make this dish. Yums :)


Made this tonight and it went over very well...very tasty...Definitely make it again...Made my own chicken stock and you do have to add salt and pepper to your individual taste...I also mixed the Chorizo...half mild and half hot...As mentioned by arstielady...Next time might just try the Linguica sausage....Thanks for the post...Gave it a "High Five"

I went to a resterant the other night that had this soup. So I tried to find an easy simular one as I have never made soup. I made it tonight and it was awsome!!. I would probably add more sausage and beans myself but the taste was great
