How to make it

  • Preheat oven to 325 degrees F.
  • Line a cookie sheet with parchment paper.
  • In a large bowl, cream together the butter and sugar until smooth.
  • Stir in the egg and flour until well blended.
  • On a lightly floured surface, knead to form a soft, smooth dough.
  • Roll dough on a floured surface or between sheets of wax or parchment paper to about 1/8 inch thickness.
  • Cut out circles with a floured cookie cutter (about 2 inches in size and place them 1 inch apart on a lined cookie sheet.)
  • Bake for approximately 10 to 15 minutes or until cookies are slightly golden around the edges.
  • Remove from oven and allow to cool completely.
  • Once cookies are cool, spread the bottom of one cookie with about 1/2 teaspoon of cherry jelly.
  • Place another cookie over the jelly.
  • Then spread cookies with icing.
  • Place a cherry half in the center of each cookie.
  • Makes approximately 1-1/2 dozen, depending on the size.
  • ICING:
  • 1 cup powdered confectioners' sugar
  • 4 tablespoons butter, softened
  • 1/2 teaspoon pure vanilla extract
  • a pinch of salt
  • 1-3/4 tablespoons milk (roughly)
  • Method:
  • In a small bowl mix together sugar, butter, vanilla and salt.
  • Add just enough milk to spreading consistency.
