Scottish Empire Cookies

- 1/2 cup butter at room temperature shopping list
- 4 tablespoons sugar shopping list
- 1 egg shopping list
- 2 cups all-purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- a small jar of cherry jelly, seedless raspberry jam/jelly or whatever flavor you like shopping list
- icing shopping list
- 1 jar maraschino cherries, drained and cut in half shopping list
How to make it
- Preheat oven to 325 degrees F.
- Line a cookie sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until smooth.
- Stir in the egg and flour until well blended.
- On a lightly floured surface, knead to form a soft, smooth dough.
- Roll dough on a floured surface or between sheets of wax or parchment paper to about 1/8 inch thickness.
- Cut out circles with a floured cookie cutter (about 2 inches in size and place them 1 inch apart on a lined cookie sheet.)
- Bake for approximately 10 to 15 minutes or until cookies are slightly golden around the edges.
- Remove from oven and allow to cool completely.
- Once cookies are cool, spread the bottom of one cookie with about 1/2 teaspoon of cherry jelly.
- Place another cookie over the jelly.
- Then spread cookies with icing.
- Place a cherry half in the center of each cookie.
- Makes approximately 1-1/2 dozen, depending on the size.
- ICING:
- 1 cup powdered confectioners' sugar
- 4 tablespoons butter, softened
- 1/2 teaspoon pure vanilla extract
- a pinch of salt
- 1-3/4 tablespoons milk (roughly)
- Method:
- In a small bowl mix together sugar, butter, vanilla and salt.
- Add just enough milk to spreading consistency.
