French Chicken

- 6 boneless chicken breasts shopping list
- 2 cans (14.5 oz each) diced tomatoes w/balsamic vinegar, basil and olive oil, not drained (if you cannot find, any other will do just fine too) shopping list
- 2 cans15-16 oz each white kidney beans, rinsed (or one can white, one can red) shopping list
- 1 large yellow bell pepper, quartered, lengthwise, then sliced crosswise shopping list
- 1 tsp each dried oregano and minced garlic shopping list
- 1/2 tsp each dried basil and salt shopping list
- 1/4 tsp freshly ground black pepper shopping list
- 1 Tbsp extra-virgin olive oil shopping list
- Chopped parsley shopping list
How to make it
- Mix all ingredients except olive oil and parsley in a 3 qt or larger slow cooker. Cover and cook on low 6-8 hours or until chicken is cooked through and vegetables are tender.
- Stir in olive oil; sprinkle with parsley.
- Serve and enjoy!
