Ingredients
  • 1/3 cup olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon sweet paprika
  • 2 cloves garlic, crushed
  • Juice of 1 lemon
  • 1 teaspoon salt
  • Freshly ground black pepper
  • 1.5kg chicken thigh fillets, trimmed
  • ½ cup hummus, to serve
  • ½ cup natural yogurt, to serve
  • Wraps, Shredded lettuce, Tomatoes, Cucumber, to serve

Directions
  1. Combine all ingredients except chicken thighs in a large bowl. Stir well. Add chicken and toss with hands to thoroughly coat chicken in marinade.
  2. Thread chicken pieces onto rotisserie spit, and secure tightly in the centre of the spit (or to ensure the meat is suspended over the grill part of the barbecue). (You may need to cut a small hole in the centre
  3. of each piece of chicken to allow spit to go through more easily). Place rotisserie spit onto barbecue and turn on.
  4. Cook chicken thighs about 1 hour, basting occasionally with remaining marinade, until browned and cooked through.
  5. Combine yogurt and hummus in a medium bowl; season to taste with lemon juice and olive oil as desired.
  6. Serve thinly sliced chicken in wraps with shredded lettuce, tomato, cucumber and some of the yogurt - hummus mixture.
