Ingredients
  • 1 Cup chopped onion
  • 2 Garlic cloves, minced
  • 2 Cans yellow hominy, drained
  • 2 Cups chopped tomatoes
  • 1 (4 oz) Can green chilies, chopped
  • 1 Tsp chili powder
  • 1/2 Tsp cumin
  • 1/4 Tsp pepper
  • 1/2 Cup shredded cheddar cheese (reduced fat)

Directions
  1. 1. Spray a large skillet with cooking spray and saute onion and garlic until tender.
  2. 2. Add the hominy, tomatoes, chilies, chili powder, cumin, and pepper. Mix gently.
  3. 3. Transfer to a 2 quart baking dish coated with cooking spray.
  4. 4.Bake at 350 degrees, uncovered, for 25 minutes. Sprinkle with cheese and bake another 5 minutes or until cheese is melted.
