How to make it

  • 1. In a large bowl, combine potatoes and bacon.
  • 2. In another bowl, combine the remaining ingredients.
  • Add to potato mixture and toss gently to coat.
  • 3. Transfer to a greased 4-1/2-quart baking dish. Bake uncovered, at 325° for 50-60 minutes or until bubbly and lightly browned.

    zemirahjoy, I can't imagine hating mayo, but increasing the sour cream can be a bit over-powering if yo put too much ( I tried it) so just be careful. Does he like the mustard mayo-blends available in the stores? Maybe try some light cream instead? The mayo just gives it a creamer texture so I think the milk/or cream would work. Let me know, okay?     This looks delicious! However, my husband absolutely hates the taste of cooked mayo. I've tested this and made things with mayo in them anyway (like a Mayo Chocolate Cake for instance), but he always can taste the mayo. Do you think substituting more sour cream for the mayo would work? Maybe a beaten egg as well? What do you think?
