Filet Mignon with Vanilla Wine Sauce

- Sauce: shopping list
- 2 cups beef stock shopping list
- 1/4 cup dry red wine shopping list
- 1 small onion sliced in half shopping list
- 3 large sprigs of oregano or marjorma shopping list
- 2 whole garlic cloves shopping list
- 1 tsp pure vanilla extract shopping list
- 1 1/2 Tbs tomato paste shopping list
- 1 tsp brown sugar shopping list
- 2 Tbs butter softened shopping list
- some flour shopping list
- Steaks: shopping list
- 4, 4 oz filet mignon steaks ( 1 1/2 inches thick ) shopping list
- salt and pepper shopping list
- olive oil shopping list
- 2 cups mushrooms shopping list
- 1/4 cup clarified butter shopping list
How to make it
- For sauce: combine sauce ingredients except butter and flour and simmer until reduced by half and strain into a small saute pan and add in butter and a bit of flour, stirring until glossy and slightly thickened
- For steaks, salt and pepper and sear in some olive oil just to brown each side.
- Transfer to a 400F oven and roast until desired doneness about 8 to 10 minutes
- Meanwhile saute the mushrooms in the butter
- To serve:
- Place steaks on a platter, spoon over the saucem garnish with the mushrooms
