Ingredients
  • Sauce:
  • 2 cups beef stock
  • 1/4 cup dry red wine
  • 1 small onion sliced in half
  • 3 large sprigs of oregano or marjorma
  • 2 whole garlic cloves
  • 1 tsp pure vanilla extract
  • 1 1/2 Tbs tomato paste
  • 1 tsp brown sugar
  • 2 Tbs butter softened
  • some flour
  • Steaks:
  • 4, 4 oz filet mignon steaks ( 1 1/2 inches thick )
  • salt and pepper
  • olive oil
  • 2 cups mushrooms
  • 1/4 cup clarified butter

Directions
  1. For sauce: combine sauce ingredients except butter and flour and simmer until reduced by half and strain into a small saute pan and add in butter and a bit of flour, stirring until glossy and slightly thickened
  2. For steaks, salt and pepper and sear in some olive oil just to brown each side.
  3. Transfer to a 400F oven and roast until desired doneness about 8 to 10 minutes
  4. Meanwhile saute the mushrooms in the butter
  5. To serve:
  6. Place steaks on a platter, spoon over the saucem garnish with the mushrooms
