How to make it

  • For sauce: combine sauce ingredients except butter and flour and simmer until reduced by half and strain into a small saute pan and add in butter and a bit of flour, stirring until glossy and slightly thickened
  • For steaks, salt and pepper and sear in some olive oil just to brown each side.
  • Transfer to a 400F oven and roast until desired doneness about 8 to 10 minutes
  • Meanwhile saute the mushrooms in the butter
  • To serve:
  • Place steaks on a platter, spoon over the saucem garnish with the mushrooms
