Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 3/4 cup water
  • 1/4 cup vegetable oil
  • 1 cup fresh or frozen blueberries
  • 1/4 cup raspberry preserves

Directions
  1. Preheat oven to 350 degrees.
  2. Grease & flour a 9" x 5" loaf pan.
  3. In large bowl, combine flour, sugar, salt, baking powder & baking soda.
  4. In small bowl, beat together egg, water & oil; stir into dry ingredients just until moistened.
  5. Pour into pan. Spoon preserves over batter; cut through batter with a knife to swirl. Bake for 65-70 minutes until toothpick inserted near center comes out clean. Cool 10 minutes; remove from pan to a wire rack

Now this sounds good - but why raspberry preserve and not fresh or frozen, or can you substitute it?
