How to make it

  • Cream butter and sugar; add vanilla.
  • Sift dry ingredients, add to butter mixture alternately with milk.
  • Beat egg whites until stiff but not dry.
  • Fold whites into batter.
  • Divide batter equally between four greased floured 9 inch cake pans.
  • Bake at 375 degrees 16 minutes, or until done, cool.
  • Put egg yolks in top of double boiler; beat slightly.
  • Add sugar, salt and butter.
  • Cook until sugar is dissolved and mix has thickened.
  • Remove from heat and add the bourbon.
  • Beat one minute. Stir in nuts, raisins coconut and cherries.
  • Spread frosting between layers and top and sides of cake.
  • Cover tightly and store at least one day to ripen. Can be frozen too.
  • On day of service, make seven minute frosting.
  • Combine sugar, water cream of tartar and salt in saucepan.
  • Bring to a boil, stirring until sugar dissolves.
  • Very slowly add to unbeaten egg whites in mixing bowl, beating constantly with electric mixer until stiff peaks form.
  • Beat in vanilla.
  • Frost over prepared cake.

    Dried shredded coconut would work and I have used it. I don't have the origins of why they stated frozen coconut in the recipe, it has always been a puzzle.(perhaps it helped with the grating part) I do remember as a young girl watching my mom struggle with fresh coconut and an ugly scene with an ice pick. The whole scenario was fraught with danger. Using packaged coconut certainly looks safer. This is a special occasion cake. I was so thrilled to have it at my bridal shower, it was a wonderful gift.

    This must be an incredible cake. How truly special to have one from generations of your family shared with us.
    Question -- you refer to frozen coconut. Is this pulp or would dried shredded coconut work? I cannot recall seeing coconut in any grocer's freezer case but then again, I wasn't looking for it.
