Lane Cake Southern Tradition Recipe

Lane Cake Southern Tradition Recipe
Classic cake served at my wedding shower 25 years ago. Worth the ripening stage. Great-great Aunt Lucille's time honored recipe.

This must be an incredible cake. How truly special to have one from generations of your family shared with us.
Question -- you refer to frozen coconut. Is this pulp or would dried shredded coconut work? I cannot recall seeing coconut in any grocer's freezer case but then again, I wasn't looking for it.
Thank you

Dried shredded coconut would work and I have used it. I don't have the origins of why they stated frozen coconut in the recipe, it has always been a puzzle.(perhaps it helped with the grating part) I do remember as a young girl watching my mom struggle with fresh coconut and an ugly scene with an ice pick. The whole scenario was fraught with danger. Using packaged coconut certainly looks safer. This is a special occasion cake. I was so thrilled to have it at my bridal shower, it was a wonderful gift.

Love this recipe thanks high5
