How to make it

  • In a 12 inch skillet, dutch oven or lidded casserole, heat olive oil over medium high heat
  • Add half the chicken and cook until golden brown, about 6 minutes
  • turn midway through cooking time
  • remove with tongs
  • brown remaining chicken
  • set aside
  • Reduce heat to medium add garlic and shallots
  • saute until fragrant about 15 seconds
  • Add cherry tomatoes, oregano, white wine. 1/2 tsp salt and 1/4 tsp pepper
  • saute until wine reduces by 1/3 about 4 minutes shaking the pan from time to time
  • Return chicken to pan, cover and simmer until chicken is completely cooked, 5 to 7 min.
  • Serve chicken and tomatoes over angel hair pasta
  • sprinkle with parmesan cheese
