Sauteed Chicken With Cherry Tomatoes

- 3 tbsp of olive oil shopping list
- 6 boneless skinless chicken breast shopping list
- 4 garlic gloves smashed and coursely chopped shopping list
- 6 shallots coursely chopped shopping list
- 2 pints of cherry or grape tomatoes shopping list
- 1 tsp, dries oregano shopping list
- 3/4 cup dry white wine shopping list
- salt and freshly ground pepper shopping list
- 1 pound of angel hair pasta cooked according to directions shopping list
- grated parmesan cheese shopping list
How to make it
- In a 12 inch skillet, dutch oven or lidded casserole, heat olive oil over medium high heat
- Add half the chicken and cook until golden brown, about 6 minutes
- turn midway through cooking time
- remove with tongs
- brown remaining chicken
- set aside
- Reduce heat to medium add garlic and shallots
- saute until fragrant about 15 seconds
- Add cherry tomatoes, oregano, white wine. 1/2 tsp salt and 1/4 tsp pepper
- saute until wine reduces by 1/3 about 4 minutes shaking the pan from time to time
- Return chicken to pan, cover and simmer until chicken is completely cooked, 5 to 7 min.
- Serve chicken and tomatoes over angel hair pasta
- sprinkle with parmesan cheese
