Ingredients

2 cups flour

2 tsp cinnamon

2 tsp baking soda

1/4 tsp salt

1 1/4 cups sugar

2 cups shredded carrots

1/2 cup chopped pecans

1/2 cup raisins

1/4 cup flaked cocnut

3 eggs

1 cup oil

2 tsp vanilla

1 apple small diced

Directions

Sift all dry ingredients

Combine all wet ingrdients

Whisk all together to blend well

Fold in apple

Bake in muffin tins , filling 2/3 full in a preheated 350 F until tested done, about 20 to 25 mins
