Mango Salsa Recipe
Pretty much a pico de gallo with chopped mango in the mix. Leave it chopped and chunky or puree it for a smoother salsa. Goes great with seafood or chicken.

Ingredients
  • 1 ripe mango, peeled and cubed
  • 1 can crushed pineapple, reserve liquid
  • 1 bunch cilantro with leaves picked from stems
  • 1 large red onion, diced
  • 2 jalapeƱos, diced
  • 6-8 roma tomatoes, diced
  • Salt

Directions
  1. In a large bowl, combine all ingredients.
  2. Add juice from can until you get it as wet as you want it.
  3. For a smoother salsa, pulse in food processor for a few seconds.
  4. Add salt to taste.
  5. Allow to chill for at least an hour so flavors can combine.

A Mango Salsa to die for I would add a little more heat just my taste and you know that about me.
This is what I like with Talapia or Haddock.
I am glad you have it on you menu.
