Cucumber Salad

- 3 large seedless cucumbers shopping list
- 3 cloves garlic, minced shopping list
- 3 hot chilies (tame it down if wanted/needed), minced shopping list
- 1 large can mandarin oranges, drained shopping list
- 2 cups dried apricots, chopped shopping list
- 1 red bell pepper, sliced thin about 1.5” long shopping list
- 1 yellow bell pepper, sliced thin about 1.5” long shopping list
- olive oil shopping list
- lemon juice shopping list
- Salt shopping list
- Chopped mint leaves shopping list
How to make it
- Halve cucumbers and slice thin. Place in large bowl and salt lightly.
- In a separate bowl, combine garlic and chilies.
- Add the juice of one lemon.
- Slowly add about three tablespoons of olive oil and mix well.
- Add oranges, apricots, and peppers to cucumbers.
- Dress with olive oil mixture. Add more olive oil at this point if desired/needed.
- Add about half a cup of chopped mint leaves.
- Toss well and chill for at least an hour before serving.
