This is a very VERY simple vegan pesto. I love this stuff. It's for 4, but if you want to double up - it can be for 2.

Ingredients
  • 2 handfulls of fresh basil
  • Extra Virgin Olive Oil
  • 2-3 garlic cloves (minced or chopped)
  • 1 handfull of pine nuts
  • 3 tablespoons nutritional yeast flakes/powder
  • Salt and Pepper to taste

Directions
  1. Wash the basil very well. Throw 2 handfulls (large) of basil into the processor.
  2. Drizzle basil with olive oil until thoroughly coated. About 2 tablespoons worth.
  3. Add the garlic. You can either add them whole or mince/chop them.
  4. Add pinenuts whole.
  5. Add the nutritional yeast. You can add more if desired at the end and reprocess.
  6. Add a bit of salt and pepper if desired. You can now process until somewhat smooth with tiny bits of basil throughout. Taste and season with salt as desired.
  7. You can add this to pasta (with a bit more olive oil) or add it to your other favorite Italian meals. This can be frozen, too. You can line an ice cube tray with plastic wrap and freeze cubes of it for easy thawing.
