Celery Apple Salad With Currants Recipe
CELERY APPLE SALAD WITH CURRANTS This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Fuqua Estate in Richardson, Texas in 1994.

Ingredients
  • 1/2 cup dried currants
  • 1 large head celery chopped
  • 2 golden delicious apples chopped
  • 6 pale green celery leaves
  • 4 parsley sprigs
  • 10 walnuts cracked and left in large pieces
  • 2 tablespoons walnut oil
  • 1 tablespoon lemon juice or champagne vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Cover currants with warm water for 10 minutes then drain well and squeeze out water.
  2. Separate stalks of celery and peel the tougher outer stalks.
  3. Slice celery into thin pieces straight across or at an angle.
  4. Cut apples into quarters then thinly slice crosswise.
  5. Finely chop the celery leaves and parsley.
  6. Combine celery, apples, currants, celery leaves, parsley and walnuts in a bowl.
  7. Toss with just enough walnut oil to coat everything lightly.
  8. Add lemon juice or vinegar then lightly salt and season with pepper and toss again.

Another new one for me to try. Sounds so very good with the walnuts in there. Can you use either, black or english walnuts in this?
