Celery Apple Salad With Currants

- 1/2 cup dried currants shopping list
- 1 large head celery chopped shopping list
- 2 golden delicious apples chopped shopping list
- 6 pale green celery leaves shopping list
- 4 parsley sprigs shopping list
- 10 walnuts cracked and left in large pieces shopping list
- 2 tablespoons walnut oil shopping list
- 1 tablespoon lemon juice or champagne vinegar shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Cover currants with warm water for 10 minutes then drain well and squeeze out water.
- Separate stalks of celery and peel the tougher outer stalks.
- Slice celery into thin pieces straight across or at an angle.
- Cut apples into quarters then thinly slice crosswise.
- Finely chop the celery leaves and parsley.
- Combine celery, apples, currants, celery leaves, parsley and walnuts in a bowl.
- Toss with just enough walnut oil to coat everything lightly.
- Add lemon juice or vinegar then lightly salt and season with pepper and toss again.

Another new one for me to try. Sounds so very good with the walnuts in there. Can you use either, black or english walnuts in this?
