Celery Root Salad

- 2 pounds celery root shopping list
- 4 cups salted boiling water shopping list
- 6 tablespoons olive oil shopping list
- 3 tablespoons white wine vinegar shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons granulated sugar shopping list
- 1-1/4 teaspoon dry mustard shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 garlic clove crushed shopping list
- 1 teaspoon fresh dill shopping list
- 1/3 cup scallions minced shopping list
- 1/3 cup parsley minced shopping list
How to make it
- Peel celery root and cut it into cubes then add to boiling water and cook 15 minutes.
- Drain well then combine remaining ingredients and whisk or shake to make a dressing.
- Pour dressing over celery root and toss well then refrigerate least two hours before serving.
