Mushroom Soup Recipe

This is not your out of the can mushroom soup... It is so full of flavor and I love it as a starter.

Ingredients
- 1 oz Dried wild mushrooms, reconstitute in 1 cup of water, drained and sliced.
- Fresh mushrooms sliced , use about 8 oz.
- 1 onion, chopped
- 1 lb. fresh mushrooms, sliced
- 4 Tbsp. olive oil or real butter
- 1/4 cup flour
- 6 cups chicken stock
- salt & pepper
- Heavy cream or Half and half to taste..
Directions
- In a soup pot heat oil.
- Add onions and cook until soft and translucent.
- Add both mushrooms and cook over med. heat for 5 minutes.
- Add flour and cook briefly.
- Add stock, simmer for 45 minutes to 1 hour.
- You may puree half the soup and/or add about 1 cup of cream or half and half.. (optional)

Love me some mushroom soup, I do! The only recipe I've seen like this was on the side of a soup cup, and some of the words had rubbed off. Boy, am I glad to find another one.
