Mushroom Soup Recipe

Ingredients

1 oz Dried wild mushrooms, reconstitute in 1 cup of water, drained and sliced.

Fresh mushrooms sliced , use about 8 oz.

1 onion, chopped

1 lb. fresh mushrooms, sliced

4 Tbsp. olive oil or real butter

1/4 cup flour

6 cups chicken stock

salt & pepper

Heavy cream or Half and half to taste..

Directions

In a soup pot heat oil.

Add onions and cook until soft and translucent.

Add both mushrooms and cook over med. heat for 5 minutes.

Add flour and cook briefly.

Add stock, simmer for 45 minutes to 1 hour.

You may puree half the soup and/or add about 1 cup of cream or half and half.. (optional)
