Curried Spinach Salad With Chicken And Apples Recipe
CURRIED SPINACH SALAD WITH CHICKEN AND APPLES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Corrigan Estate in Justin, Texas in 1992.

Ingredients
  • 2 chicken breasts cut into thin strips
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 6 cups spinach torn
  • 1 cup apple chopped
  • 1/4 cup peanuts
  • 1/4 cup raisins
  • Dressing:
  • 2/3 cup vegetable oil
  • 1/2 cup maple syrup
  • 1/2 cup cider vinegar
  • 1 tablespoon instant minced onion
  • 1 teaspoon curry powder
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon salt

Directions
  1. Combine all dressing ingredients and blend until smooth.
  2. Chill at least four hours.
  3. Sauté chicken in oil after marinating in soy sauce then drain and chill 4 hours.
  4. Combine spinach with dressing and toss.
  5. Divide into 4 plates.
  6. Divide chicken, apple, peanuts and raisins then place on top of spinach.
  7. Serve immediately.

I'm loving this salad, everything about it!


Any dish with Maple Syrup is a good dish....This one deserves a try. It's kind of a French/Asian/Canadian dish...three of my favourite cuisines.
