Ingredients
  • 5 pounds peeled figs
  • 5 pounds sugar
  • 1 lemon sliced

Directions
  1. Peel and quarter figs, add sugar and sliced lemon.
  2. Let stand two or three hours to draw juice,
  3. stir now and then to help dissolve sugar.
  4. When sugar has softened, start cooking.
  5. Let come to a rolling boil.
  6. Boil 25-30 minutes,
  7. stirring constantly so liquid doesn't stick to bottom of pot.
  8. After foam disappears and juice has thickened a little,
  9. ladle into hot jars and seal.
