Pineapple Mousse

- pineapple Mousse shopping list
- Preparation time: 25 minutes shopping list
- Chilling time: 3 hours shopping list

- Cut lengthwise: shopping list
- 1 ripe pineapple shopping list
- Scoop out fruit from both halves, removing the core. shopping list
- Finely chop the fruit, reserving juice. shopping list
- Mix pineapple with: shopping list
- 1 1/2 tablespoons lime juice shopping list
- 1/2 cup honey shopping list
- 2 cups heavy cream, whipped shopping list
How to make it
- Spoon mixture into an 8-inch square pan.
- Place in freezer for approximately 3 hours or until slightly firm.
- (To make this dish ahead of time, freeze the pineapple mixture solid and then remove from freezer 20 miuntes before serving to allow it to soften.)
- Serve garnished with:
- slices of kiwi and sprigs of fresh mint

- Note: A suggestion on the pineapple.

This sounds great. I learned from experience that if you wait to cut the pineapple until 2 or 3 rows of leaves are dried at the base, it will be as sweet as candy when you cut it open. Mmmm!
