Filet Mignon Recipe
The best cut of beef topped with Feta cheese and a brandy broth gravy.

Ingredients
  • 1 tablespoon butter
  • 2 6 oz beef steaks; 1-inch thick
  • 2/3 cup beef broth
  • 1/4 cup brandy
  • 1/2 teaspoon rosemary
  • 1/2 cup feta; crumbled

Directions
  1. Melt butter in heavy medium skillet over medium high heat.
  2. Season steaks with salt & pepper.
  3. Add steaks to skillet and saute until cooked to desired doneness, about 4 minutes per side for medium rare.
  4. Transfer steaks to plate.
  5. Add broth, brandy & rosemary to skillet & boil until sauce is reduced to 1/3 cup.
  6. Scraping up browned bits, spoon sauce over steaks.
  7. Top each steak with 1/2 the cheese.

Yes! I agree...love the brandy sauce! I'm not a fan of rosemary though:( What do you think would be a good sub for that spice?

I generally don't like my food having spice pieces in it, though I love their taste. What I usually do is put the required amount in a grinder and sprinkle it (or add it) to my food.
As for what can substitute for rosemary, gosh I have no idea. I'm sure you can leave it out completely, the recipe is one I got from Kings Supermarket years ago in Summit, NJ. We actually used to grill it on the stovetop and weigh it down with an antique clothes iron!
