I came up with this after finding a lone Italian sausage in my freezer. It really stretched it out with the rice. You could add other little bits of leftovers you have on hand, such as onion or green pepper.

Ingredients
  • 1 hot Italian sausage, casing removed
  • 1 clove garlic, minced
  • 1 8 oz can tomato sauce
  • 1 Tbs. tomato paste (from a tube)
  • 1 16 oz can of kidney beans, drained and rinsed
  • 1 Tbs. minced fresh basil
  • hot cooked rice

Directions
  1. Brown the Italian sausage in a saucepan. Add the garlic and cook for another minute.
  2. Add the tomato sauce. Rinse out the can with just a bit of water into the pan so as not to waste any sauce. Add the tomato paste, kidney beans and basil and stir to combine.
  3. Let simmer until it thickens, 15 to 20 minutes.
  4. Serve over cooked rice.
