A recipe my mother taught me when I got married and that she has been cooking for many more years than that. Lentils, garlic, onions and sauce make a thick stick to your ribs healthy soup.

Ingredients
  • 1 cup lentils
  • 3 garlic cloves; minced
  • 2 bay leaves
  • 1/2 cup onion; diced
  • salt and pepper; to taste
  • 1/4 cup tomato paste
  • 2 tablespoons olive oil

Directions
  1. Boil lentils until water turns black.
  2. Strain and rinse.
  3. Return to pot with 3 cups of water.
  4. When water boils, add remaining ingredients.
  5. Boil again until soup is thickened and dark.

I must try this nice lentil soup.


To be fair, I don't eat lentils but my husband seems to like these. I'd love to hear your comments after you've prepared it and any suggestions. I find that sometimes more is not always better and this soup is as simple as it gets. I like to beleive it tastes better that way.
