A recipe my mother taught me when I got married and that she has been cooking for many more years than that. Lentils, garlic, onions and sauce make a thick stick to your ribs healthy soup.

- 1 cup lentils
- 3 garlic cloves; minced
- 2 bay leaves
- 1/2 cup onion; diced
- salt and pepper; to taste
- 1/4 cup tomato paste
- 2 tablespoons olive oil

Ingredients

1 cup lentils shopping list
3 garlic cloves; minced shopping list
2 bay leaves shopping list
1/2 cup onion; diced shopping list
salt and pepper; to taste shopping list
1/4 cup tomato paste shopping list
2 tablespoons olive oil shopping list

How to make it

Boil lentils until water turns black.
Strain and rinse.
Return to pot with 3 cups of water.
When water boils, add remaining ingredients.
Boil again until soup is thickened and dark.

To be fair, I don't eat lentils but my husband seems to like these. I'd love to hear your comments after you've prepared it and any suggestions. I find that sometimes more is not always better and this soup is as simple as it gets. I like to beleive it tastes better that way.
