Parmesan Cutlets

- 4 chicken, turkey or veal cutlets shopping list
- 1/2 cup flour shopping list
- 2 eggs shopping list
- 3/4 cup seasoned dry bread crumbs shopping list
- 2 cups tomato sauce; heated shopping list
- 1/4 cup olive oil shopping list
- 1/2 cup parmesan cheese shopping list
- 4 oz Mozzarella cheese; shredded shopping list
How to make it
- Flatten each cutlet into an oval shape.
- Get out three bowls.
- Put flour in the first.
- Lightly beat the eggs in the second.
- In the third bowl, place the bread crumbs.
- Dip each cutlet into the flour, then the eggs, and finally into the bread
- crumbs.
- Place on a cookie sheet and refrigerate to set coating -- at least 30
- minutes.
- Heat the olive oil in a skillet and saute the cutlets.
- Top with tomato sauce and Parmesan cheese and bake at 350°F for 30 minutes.
- Remove pan from oven and sprinkle Mozzarella over meat.
- Return to the oven for another 10 minutes.
