The classic parmesan cutlet, fried and then baked with sauce and cheese toppings. Make sure your cutlets are pounded thin, they will taste better that way.

Ingredients
  • 4 chicken, turkey or veal cutlets
  • 1/2 cup flour
  • 2 eggs
  • 3/4 cup seasoned dry bread crumbs
  • 2 cups tomato sauce; heated
  • 1/4 cup olive oil
  • 1/2 cup Parmesan cheese
  • 4 oz Mozzarella cheese; shredded

Directions
  1. Flatten each cutlet into an oval shape.
  2. Get out three bowls.
  3. Put flour in the first.
  4. Lightly beat the eggs in the second.
  5. In the third bowl, place the bread crumbs.
  6. Dip each cutlet into the flour, then the eggs, and finally into the bread
  7. crumbs.
  8. Place on a cookie sheet and refrigerate to set coating -- at least 30
  9. minutes.
  10. Heat the olive oil in a skillet and saute the cutlets.
  11. Top with tomato sauce and Parmesan cheese and bake at 350°F for 30 minutes.
  12. Remove pan from oven and sprinkle Mozzarella over meat.
  13. Return to the oven for another 10 minutes.
