How to make it

  • Heat oil in a skillet until hot. Add onions and garlic, sautee until glassy.
  • add the spices and salt and cook stirring often until fragrant.
  • Brown the chicken on all sides.
  • Add the tomato puree and enough water to cover. Bring to the boil, cover, reduce heat and simmer for 30 minutes.
  • Remove the chicken and reduce the sauce till it is thick, about 10 minutes.
  • A nice touch is to add about 1/4 cup coconut cream.
  • Serve with basmati rice.

    I am a vegetarian however the ingredients are fantastic and I love basmati rice and all the rest of it. I may try it over veggies or just rice it is that good...fantastic!!! I love the tastes that I imagine.
