Easy Chicken Satay Recipe
This is from the Harrowsmith Cookbook and it is one of the best dishes I have in my collection. Easy to make and great tasting. You can also marinate chicken skewers in the sauce and BBQ them - AWESOME appetizer.

Ingredients
  • 1 chicken cut up
  • sauce:
  • 1 cup finely chopped onion
  • 1 clove of garlic crushed
  • ¼ cup soy sauce
  • ¼ cup oil (I reduce to 2 tbsp)
  • ¼ cup reduced fat peanut butter
  • 2 tbsp brown sugar
  • 3 tbsp lemon juice
  • ¼ tsp cayenne
  • 1 tsp coriander
  • serve with: cooked rice

Directions
  1. Combine all sauce ingredients in a microwave safe container and heat long enough to melt the peanut butter slightly
  2. whisk ingredients together and pour over the chicken pieces
  3. marinate chicken in sauce for at least 2 hours
  4. bake at 350 F until chicken is done
  5. serve over rice
  6. This makes a lot of sauce and I often keep the extra sauce to eat with rice later - makes an easy dinner and the sauce really is that good!
