Vegan Poppy Chicken Salad Recipe
Fast and easy to make, this chicken salad requires hardly any work at all! I like to eat it in a whole wheat pita with spinach leaves and "cheese." It's so great and very summery!

Ingredients
  • Morningstar Meal Starters Chicken Strips (made from gardein!)
  • 1 bunch scallions
  • 3-4 sticks celery
  • 2 cups dried cranberries
  • 1 cup slivered almonds
  • Poppy seed dressing ( I suggest Brianna's if you can find it)
  • Chopped thyme

Directions
  1. Cook up chicken strips in pan until thawed and lightly browning. Remove from heat and let cool.
  2. Chop chicken and place in large bowl. Finely slice celery and scallions, add to chicken. Toss in cranberries and almonds.
  3. Slowly add dressing while stirring. Add as much as you like, but remember it's harder to take out than it is to put in.
  4. Garnish with thyme and more scallions.
