Frozen Lemon Divine Recipe
My sister developed this recipe years ago. It is a slight take off of a lemon dessert my Grandmother used to make. This is more creamy and lemony with a slightly different crust. (Ritz Crackers)

  • 6 Tbsp Cornstarch
  • 1 1/2 cups granulated sugar
  • 1/4 tsp salt
  • 2 cups water
  • 1/2 cup lemon juice
  • 4 Tbsp sweet butter
  • 3 egg yolks
  • 2 tsp grated lemon zest
  • 1 Quart vanilla ice cream
  • 1 stick sweet butter
  • 1 small tub Cool Whip
  • 2 sleeves Ritz Crackers.

Directions
  1. Place cornstarch, sugar, salt, water, lemon juice, egg yolks, and lemon zest into a microwave proof bowl and heat at 50% until hot and thickened. Stir in 4 Tbsp sweet butter until melted.
  2. While still hot, whisk in vanilla ice cream until thoroughly mixed.
  3. Fold in Cool Whip.
  4. Crush the Ritz Crackers. Melt the stick of butter and add to crackers. Thoroughly blend. Press into the bottom of a 9 x 9 inch greased pan. Save back 1/3 cup of butter/cracker mixture.
  5. Pour the lemon mixture into pan and sprinkle the top with the remaining cracker mixture.
  6. Freeze overnight.
  7. Serve frozen.
