Frozen Lemon Divine

- 6 Tbsp cornstarch shopping list
- 1 1/2 cups granulated sugar shopping list
- 1/4 tsp salt shopping list
- 2 cups water shopping list
- 1/2 cup lemon juice shopping list
- 4 Tbsp sweet butter shopping list
- 3 egg yolks shopping list
- 2 tsp grated lemon zest shopping list
- 1 Quart vanilla ice cream shopping list
- 1 stick sweet butter shopping list
- 1 small tub Cool Whip shopping list
- 2 sleeves Ritz crackers. shopping list
How to make it
- Place cornstarch, sugar, salt, water, lemon juice, egg yolks, and lemon zest into a microwave proof bowl and heat at 50% until hot and thickened. Stir in 4 Tbsp sweet butter until melted.
- While still hot, whisk in vanilla ice cream until thoroughly mixed.
- Fold in Cool Whip.
- Crush the Ritz Crackers. Melt the stick of butter and add to crackers. Thoroughly blend. Press into the bottom of a 9 x 9 inch greased pan. Save back 1/3 cup of butter/cracker mixture.
- Pour the lemon mixture into pan and sprinkle the top with the remaining cracker mixture.
- Freeze overnight.
- Serve frozen.
