How to make it

  • Place cornstarch, sugar, salt, water, lemon juice, egg yolks, and lemon zest into a microwave proof bowl and heat at 50% until hot and thickened. Stir in 4 Tbsp sweet butter until melted.
  • While still hot, whisk in vanilla ice cream until thoroughly mixed.
  • Fold in Cool Whip.
  • Crush the Ritz Crackers. Melt the stick of butter and add to crackers. Thoroughly blend. Press into the bottom of a 9 x 9 inch greased pan. Save back 1/3 cup of butter/cracker mixture.
  • Pour the lemon mixture into pan and sprinkle the top with the remaining cracker mixture.
  • Freeze overnight.
  • Serve frozen.
