How to make it

  • Saute the bacon until just getting crisp.
  • Remove the bacon but leave the rendering in the pan
  • Add the onion to the bacon drippings and saute until translucent
  • Add the chipotle and the corn
  • Saute for several minutes, the corn will start to darken
  • Return the bacon the pan and serve
  • You can adjust the amount of chipotle or substitute minced jalapeno or serrano chiles or leave the chile out all together. We serve this with country fried steak or fried chicken, mashed garlic cheese potatoes, and milk gravy. Don't forget the biscuits.
