- 2 tablespoons extra-virgin olive oil (EVOO) shopping list
- 6 large cloves garlic, finely chopped shopping list
- 1 onion, chopped shopping list
- 24 medium cremini or white mushrooms, chopped shopping list
- 1 pound ground beef sirloin shopping list
- salt and freshly ground pepper shopping list
- 1/2 cup dry sherry (eyeball it) shopping list
- One 15-ounce can tomato sauce shopping list
- 2 tablespoons worcestershire sauce (eyeball it) shopping list
- 2 tablespoons butter, softened shopping list
- 4 crusty rolls, split shopping list
- Flat-leaf parsley, chopped (a generous handful) shopping list
- manchego cheese, for shaving shopping list
How to make it
- 1. In a deep skillet, heat the EVOO, 2 turns of the pan, over medium heat. Add the garlic and onion and cook until softened, about 4 minutes. Add the mushrooms and cook until browned, about 5 minutes. Add the beef and cook, breaking it up with a wooden spoon, until browned. Season with salt and pepper. Stir in the sherry and cook, scraping up any browned bits from the bottom of the pan, until slightly reduced, about a minute. Stir in the tomato and Worcestershire sauces and simmer for 10 minutes.
- 2. Preheat the broiler. Spread the butter on the rolls, and toast. Sprinkle the parsley on the roll bottoms and pile on the beef mixture. Using a vegetable peeler, shave the cheese over the meat. Set the roll tops into place.
