Low-Fat Guacamole

- 1 16-oz can lima beans shopping list
- 1 14-oz can low-salt sweet peas, drained shopping list
- 2 avocados, peeled and cubed shopping list
- 1/4 cup lemon juice shopping list
- 1/2 cup non-fat sour cream shopping list
- 1/8 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/8 tsp cayenne pepper shopping list
- 1 1/2 cups chopped tomatoes shopping list
- 1 jalapeno chili, minced shopping list
- 1/4 cup minced cilantro shopping list
How to make it
- drain lima beans and rinse
- Place in food processor, along with the peas, 1 1/2 avocados, lemon juice, sour cream, salt and peppers.
- Process until smooth
- spoon into a bowl.
- stir in remaining cubed avocado
- stir and mash with a fork until mostly smooth
- stir in tomatoes, jalapeno and cilantro
- Serve immediately, or refrigerate until ready to use.
- NOTE:
- You can serve this as a dip, but there are other ways of using it.
- It makes a great sandwich spread with cooked chicken or turkey.
- You can top hot tomato soup with it, or use it as a topping for grilled fish or chicken.
- It is also delicious in layered dips.
