Ingredients
  • 1 16-oz can lima beans
  • 1 14-oz can low-salt sweet peas, drained
  • 2 avocados, peeled and cubed
  • 1/4 cup lemon juice
  • 1/2 cup non-fat sour cream
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper
  • 1 1/2 cups chopped tomatoes
  • 1 jalapeno chili, minced
  • 1/4 cup minced cilantro

Directions
  1. drain lima beans and rinse
  2. Place in food processor, along with the peas, 1 1/2 avocados, lemon juice, sour cream, salt and peppers.
  3. Process until smooth
  4. spoon into a bowl.
  5. stir in remaining cubed avocado
  6. stir and mash with a fork until mostly smooth
  7. stir in tomatoes, jalapeno and cilantro
  8. Serve immediately, or refrigerate until ready to use.
  9. NOTE:
  10. You can serve this as a dip, but there are other ways of using it.
  11. It makes a great sandwich spread with cooked chicken or turkey.
  12. You can top hot tomato soup with it, or use it as a topping for grilled fish or chicken.
  13. It is also delicious in layered dips.
