How to make it

  • drain lima beans and rinse
  • Place in food processor, along with the peas, 1 1/2 avocados, lemon juice, sour cream, salt and peppers.
  • Process until smooth
  • spoon into a bowl.
  • stir in remaining cubed avocado
  • stir and mash with a fork until mostly smooth
  • stir in tomatoes, jalapeno and cilantro
  • Serve immediately, or refrigerate until ready to use.
  • NOTE:
  • You can serve this as a dip, but there are other ways of using it.
  • It makes a great sandwich spread with cooked chicken or turkey.
  • You can top hot tomato soup with it, or use it as a topping for grilled fish or chicken.
  • It is also delicious in layered dips.
