Ingredients
  • 1 12-oz tube low-fat refrigerated biscuit dough
  • 1/4 cup yellow cornmeal
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 1/2 cup frozen meatless soy crumbles
  • 2 tsp chili powder
  • 1/2 tsp dried oregano leaves
  • 1/2 cup vegetarian re-fried beans
  • 1 tomato, chopped
  • 1/3 cup tomato sauce
  • 1/2 cup low-fat pepper jack cheese

Directions
  1. preheat oven to 400*F
  2. separate the dough into biscuits, then separate each biscuit into four thin pieces along the lines
  3. dip each side into cornmeal and place on ungreased cookie sheet
  4. in a skillet, heat the olive oil over medium heat
  5. add onion
  6. cook & stir until tender, about 5 min
  7. stir in meatless soy crumbles, chili pepper & dried oregano
  8. cook and stir until crumbles defrost
  9. add re-fried beans, tomatoes, & tomato sauce
  10. stir over low heat for 2 minutes
  11. remove from heat.
  12. spoon mixture on top of dough rounds
  13. sprinkle with cheese
  14. bake for 8 to 10 minutes, or until crusts are golden brown, and topping is hot, & cheese is melted.
