Mini Mexican Pizzas

- 1 12-oz tube low-fat refrigerated biscuit dough shopping list
- 1/4 cup yellow cornmeal shopping list
- 1 tbsp olive oil shopping list
- 1/2 cup chopped onion shopping list
- 1/2 cup frozen meatless soy crumbles shopping list
- 2 tsp chili powder shopping list
- 1/2 tsp dried oregano leaves shopping list
- 1/2 cup vegetarian re-fried beans shopping list
- 1 tomato, chopped shopping list
- 1/3 cup tomato sauce shopping list
- 1/2 cup low-fat pepper jack cheese shopping list
How to make it
- preheat oven to 400*F
- separate the dough into biscuits, then separate each biscuit into four thin pieces along the lines
- dip each side into cornmeal and place on ungreased cookie sheet
- in a skillet, heat the olive oil over medium heat
- add onion
- cook & stir until tender, about 5 min
- stir in meatless soy crumbles, chili pepper & dried oregano
- cook and stir until crumbles defrost
- add re-fried beans, tomatoes, & tomato sauce
- stir over low heat for 2 minutes
- remove from heat.
- spoon mixture on top of dough rounds
- sprinkle with cheese
- bake for 8 to 10 minutes, or until crusts are golden brown, and topping is hot, & cheese is melted.
