This is a quick delicious version of chicken cooked the hunters way. The cannellini beans are different and tast in this version. also good over rice.This is from Nigella Lawson

  • 1Tbs garlic oil
  • 1/2c pancetta cubes or bacon
  • 6 scallions,finely sliced
  • 1tsp fine chopped rosemary leaves
  • 1lb. chicken thighs,each cut in 4 pieces
  • 1/2tsp celery salt
  • 1/2c white wine
  • 1(14-oz.)can chopped tomatoes
  • 2 bayleaves
  • 1/2tsp sugar
  • 1(14-oz.) can cannellini beans,optional

Directions
  1. Put the garlic oil in pan with the pancetta,sliced scallions and chopped rosemary and fry a couple of minutes.
  2. Add bite sized chicken pieces,stirring well,and sprinkle with celery salt.
  3. Pour in the wine and let come to to a bubble before adding tomatoes,bay leaves and sugar. Put lid on and let pan simmer for 20 mins.
  4. Drain and add a can of cannellini beans and when they have warmed through too,you are ready to eat. You can omit cannellini beans and serve over rice or pasta.
