Rhubarb Dumplings

- Sauce: shopping list
- 1 ½ cups water shopping list
- 1 Tbsp flour shopping list
- 1-1/2 cups sugar shopping list
- 1/3 cup butter shopping list
- 1/2 teaspoon ground cinnamon shopping list
- salt shopping list
- 1 teaspoon vanilla shopping list
- red food coloring, optional shopping list
- Dough: shopping list
- 2 cups all-purpose flour shopping list
- 2 tablespoons sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/4 teaspoon salt shopping list
- 2-1/2 tablespoons cold butter shopping list
- 3/4 cup milk shopping list
- Filling: shopping list
- 2 tablespoons butter, softened shopping list
- 2 cups rhubarb, finely chopped shopping list
- 1/2 cup sugar shopping list
- 1/2 teaspoon cinnamon shopping list
How to make it
- In a saucepan, combine sugar, flour, cinnamon and salt. Mix with water and butter. Bring to boil. Cook and stir one minute. Remove from heat. Add vanilla and food coloring to tint to deep pink. Set aside.
- For dough, combine flour, sugar, baking powder and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Add milk. Mix quickly - do not overmix.
- Roll out on floured surface into 12x9 rectangle. Spread with softened butter. Arrange rhubarb on top. Combine sugar and cinnamon. Sprinkle over rhubarb.
- Roll up from long side. Place on cutting board, seam side down. Cut into 12 slices. Arrange slices cut side up in greased 13x9x2 baking dish. Pour sauce over. Bake at 350 degrees for 35-40 minutes or til golden brown.

I hadn't noticed until Peetabear mentioned it & I went back & looked. I agree, it sounds like a fabulous recipe but I think you did forget the dumpling recipe.I certainly want to try this out so I hope you let us have the rest of it. Thanks
