How to make it

  • 28 cm springform pan, buttered
  • Cut pared pineapple into rings
  • Place in prepared pan
  • Cream the butter and sugar
  • Blend in the eggs
  • Combine the cornmeals
  • Add cornmeal alternately with the buttermilk
  • Place batter in the pan over the pineapple
  • Bake 180C ( 350F ) about 30 to 40 minutes until tested done.
  • This may be served as is or inverted upside down.
  • Serve warm with some whipped cream or ice cream
