Pineapple Cornmeal Upside Down Cake Recipe

Ingredients

200 g Butter

200 g whole cane sugar ( found in natural foods stores )

3 eggs

100 g , yellow cornmeal

100 g , white cornmeal

1 tsp dash of salt

1/2 of a ripe pineaple, cut into rings

50 ml Buttermilk

2 tsp baking powder

Directions

28 cm springform pan, buttered

Cut pared pineapple into rings

Place in prepared pan

Cream the butter and sugar

Blend in the eggs

Combine the cornmeals

Add cornmeal alternately with the buttermilk

Place batter in the pan over the pineapple

Bake 180C ( 350F ) about 30 to 40 minutes until tested done.

This may be served as is or inverted upside down.

Serve warm with some whipped cream or ice cream
