Pineapple Cornmeal Upside Down Cake

- 200 g butter shopping list
- 200 g whole cane sugar ( found in natural foods stores ) shopping list
- 3 eggs shopping list
- 100 g , yellow cornmeal shopping list
- 100 g , white cornmeal shopping list
- 1 tsp dash of salt shopping list
- 1/2 of a ripe pineaple, cut into rings shopping list
- 50 ml buttermilk shopping list
- 2 tsp baking powder shopping list
How to make it
- 28 cm springform pan, buttered
- Cut pared pineapple into rings
- Place in prepared pan
- Cream the butter and sugar
- Blend in the eggs
- Combine the cornmeals
- Add cornmeal alternately with the buttermilk
- Place batter in the pan over the pineapple
- Bake 180C ( 350F ) about 30 to 40 minutes until tested done.
- This may be served as is or inverted upside down.
- Serve warm with some whipped cream or ice cream
