Pounded Chicken with Mushroom and Spinach Filling

- 4 4oz chicken breasts pounded flat shopping list
- 4 oz mushroom Pate shopping list
- salt and pepper shopping list
- 1 tbsp butter shopping list
- spinach and cheese Filling shopping list
- -------------------- shopping list
- 3/4 cup non-fat cottage cheese shopping list
- 1/4 cup freshly grated parmesan cheese shopping list
- 1/2 cup finely shredded spinach shopping list
- 1/2 tsp minced ginger root shopping list
How to make it
- Preheat oven to 350. Lightly grease a shallow baking dish.
- Mix the cottage cheese, parmesan, shredded spinach and ginger root together. I popped mine back in the fridge to rest a bit.
- I used wax paper to sandwich the individual chicken breast portions then rythmically pounded each to about 1/4" thickness. Change out the paper for each pounding session. Pull it back gently because the chicken will tend to stick a bit to the paper, but if you go slow you won't have to pick it off. Some folks like to use saran wrap instead. Whatever works for you, just don't pound them naked.
- Sprinkle a little bit of salt and pepper on each pounded breast and let them rest a bit.
- The mushroom pate has become a condiment in the house so I just happened to have some lying around. I recommend ChefMeow's Almond-Mushroom pate, its very simple and a great use of that box of mushrooms you been meaning to use.
- Almond Mushroom Pate
- Spread each each chicken breast portion with a layer of the mushroom pate. Then top that with the cheese filling.
- Roll up each chicken breast. Place each chicken breast in the baking dish seam side down. Rub the outside of the chicken roll lightly with butter, sprinkle a little paprika on for color.
- Cook for 30 - 40 minutes until golden brown.
