Cream of Broccoli Soup

- 1 1/2 lbs Brocolli, fresh or frozen shopping list
- 1 pint half and half shopping list
- 2 Cups cold water shopping list
- 1 lb. Velveeta cheese shopping list
- 3/4 tsp. salt shopping list
- 1/2 tsp. pepper shopping list
- 1/2 cup corn starch mixed with 1 cup cold water shopping list
How to make it
- Steam broccoli until tender (this can be done in the microwave 6 min per pound). Place half and half and water in the top of a double boiler. Add cheese (cut in pieces), salt and pepper. Heat until all the cheese is melted. Add broccoli. Mix corn starch and water in a small bowl. Stir into the cheese mixture in the double boiler, and heat over simmering water until soup thickens.
