Ingredients
  • 1 Jar 28oz spaghetti sauce" no meat" (your choice I won't demand you use my favorite)
  • 2 boneless, skinless chicken breasts -chopped
  • 7 Manicotti/cannelloni tubes
  • 3 cups fresh spinach -chopped (you can use frozen if you insist, just squeeze the water out)
  • 1 egg
  • 1 1/2 Cups low or non-fat cottage cheese (let it sit in a colander and drain for a bit)
  • 1 1/2 tsp Italian seasoning
  • 2 Cups Mozzarella cheese - shredded

Directions
  1. Pre heat oven to 350
  2. Cook Pasta according to directions
  3. Cook your chopped spinach in the microwave for about 30 seconds until it is wilted.
  4. Mix egg, cottage cheese, 1/2 the Mozzarella and the spices together
  5. Add chopped chicken and mix well
  6. Pour 1/2 the jar of spaghetti sauce into a 9x13 pan
  7. Stuff the manicotti tubes and place in the pan
  8. Mix any remaining stuffing with the rest of the spaghetti sauce and pour over the top of the stuffed cannelloni.
  9. Spread the remaining Mozzarella cheese on top
  10. Cook for 40 minutes covered with foil.
  11. Uncover and cook for 20 minutes more

Mark this sounds so yummy and easy, i really love this recipe. but the last person that posted stuffed manicotti has never been heard from again. Be careful be very careful.....


It sure is nice to know that I'm not the only one who talks to themself,lol. This sounds very good. I have never ate Manicotti. So I will put this one on my short list to try.
