Chicken And Spinach Cannelloni

The other day I had some chicken manicotti, which I found a bit un satisfying as it was just chicken and mozzarella cheese slipped into a manicotti/cannelloni tube. So I thought to myself, "Self how do we make this more interesting? Read more " Do you refer to yourself as self? I find it better then referring to myself as Mark. you know "Mark thinks this or Mark thinks that" Because people would think I need a room with a nice soft floor and nice soft bars on the windows. Getting back to my original thought, well maybe not too original but it was mine. That is why I have the tin foil hats so that they can't put ideas into my head. Just who are they you might ask? Well don't ask out loud or they might find you. I have jury duty coming up, think I'll get called? This is the recipe I came up with, it is simple, fast, tasty and helped silence the inner voices. Ingredients
- 1 Jar 28oz spaghetti sauce" no meat" (your choice I won't demand you use my favorite) shopping list
- 2 boneless, skinless chicken breasts -chopped shopping list
- 7 manicotti/cannelloni tubes shopping list
- 3 cups fresh spinach -chopped (you can use frozen if you insist, just squeeze the water out) shopping list
- 1 egg shopping list
- 1 1/2 Cups low or non-fat cottage cheese (let it sit in a colander and drain for a bit) shopping list
- 1 1/2 tsp italian seasoning shopping list
- 2 Cups mozzarella cheese - shredded shopping list
How to make it
- Pre heat oven to 350
- Cook Pasta according to directions
- Cook your chopped spinach in the microwave for about 30 seconds until it is wilted.
- Mix egg, cottage cheese, 1/2 the Mozzarella and the spices together
- Add chopped chicken and mix well
- Pour 1/2 the jar of spaghetti sauce into a 9x13 pan
- Stuff the manicotti tubes and place in the pan
- Mix any remaining stuffing with the rest of the spaghetti sauce and pour over the top of the stuffed cannelloni.
- Spread the remaining Mozzarella cheese on top
- Cook for 40 minutes covered with foil.
- Uncover and cook for 20 minutes more

Mark this sounds so yummy and easy, i really love this recipe. but the last person that posted stuffed manicotti has never been heard from again. Be careful be very careful.....

It sure is nice to know that I'm not the only one who talks to themself,lol. This sounds very good. I have never ate Manicotti. So I will put this one on my short list to try.
