How to make it

  • Combine marinade ingredients and stir well then stand at room temperature 30 minutes.
  • Season shrimp with salt and pepper then toss with marinade and cover.
  • Refrigerate 30 minutes then combine cucumbers and mango.
  • Season with a drizzle of the oil, salt and white pepper then mix well and stir in cilantro.
  • Heat a medium wok over medium heat.
  • Add shrimp in batches to wok and stir fry 3 minutes.
  • Remove from heat and cool.
  • To serve place a small amount of the shrimp mixture on each serving plate.
  • Spoon some of the salad on top then garnish with chives.
