zesty mushroom scrammble

- 3 eggs shopping list
- 3 tablespoon water shopping list
- 1 cup thick sliced mushrooms of choice shopping list
- 1 large garlic clove, finely diced or sliced shopping list
- 1 tablespoon crushed dried oregano shopping list
- A dash rice wine vinegar shopping list
- A dash soy sauce shopping list
- salt and pepper to taste shopping list
- olive oil for frying shopping list
- 2 healthy dallups of yogurt for garnish + a sprinkling of black pepper on each dallup shopping list
How to make it
- Wash & slice mushrooms
- Dice garlic
- Heat pan with olive oil to coat
- Beat eggs with water
- Sautee mushrooms, garlic, and oregano over medium high
- Add a dash of vinegar and soy as the mushrooms reach perfection (i.e. aroma + glossy hue)
- As soon as liquid evaporates add just a touch extra olive oil to keep the eggs from sticking
- Add egg mixture and cook on low until bottom surface forms, then turn delicately and finish cooking until desired texture is reached
- Divide eggs among two plates, add yogurt and black pepper over each serving
- Enjoy!
