Ingredients

How to make it

  • Wash & slice mushrooms
  • Dice garlic
  • Heat pan with olive oil to coat
  • Beat eggs with water
  • Sautee mushrooms, garlic, and oregano over medium high
  • Add a dash of vinegar and soy as the mushrooms reach perfection (i.e. aroma + glossy hue)
  • As soon as liquid evaporates add just a touch extra olive oil to keep the eggs from sticking
  • Add egg mixture and cook on low until bottom surface forms, then turn delicately and finish cooking until desired texture is reached
  • Divide eggs among two plates, add yogurt and black pepper over each serving
  • Enjoy!
