How to make it

  • In small saucepan over low heat clarify butter then add garlic and black pepper.
  • Allow garlic to cook three minutes then remove from heat and add ginger.
  • Allow mixture to combine at least 15 minutes.
  • Using kitchen shears cut along back of the shrimp and remove veins.
  • Remove legs but keep shells and tail attached.
  • In medium mixing bowl combine shrimp and scallops.
  • Drizzle lemon juice over seafood and season with old bay, salt and black pepper.
  • Allow seafood to marinate ten minutes.
  • Prepare grill and seafood trays for medium high direct grilling.
  • Arrange shrimp on grill and cook 2 minutes then add scallop and cook 3 minutes longer.
  • Baste often with garlic butter sauce.
  • Turn seafood and continue grilling until done about 3 additional minutes.
