How to make it

  • Mix all ingredients with hands. Knead lightly. Shape small portions of the dough into long snakes. On a floured surface, cut snakes into small pieces. Place a few gnocchi in salted boiling water. As the gnocchi rise to the top of the pot, remove them with a slotted spoon. Repeat until all are cooked. Cover with hot tomato sauce and serve. You can he re-heat them using a microwave oven.

    So so good!! I used sweet potatoes and served with a savory mushroom sauce. I also had to use a bit more flour than the recipe called for. Interesting note: I accidentally forgot to add the egg, but I didn't notice until long after dinner when I was rewriting the recipe to send to a friend. SO if you use a vegan butter/margarine this recipe could easily be adapted for our vegan friends :)

    Might be a dumb question... is the 2# of potatoes the pre-cooked weight? Is there a guess at how many cups of mashed potatoes that would be? Anxious to try this! Always meant to try gnocci, and then became wheat allergic before I could! Grrr! THANKS! Now I can! Will serve with Smitten Kitchen's tomato sauce with butter and onion... mmm!
