Ingredients
  • 3 eggs
  • 1 cup self-rising flour (or 1 cup all-purpose flour and
  • 1 1/2 teaspoons baking powder)
  • 2 cups plain flour
  • 2 sticks softened butter
  • 1 1/2 teaspoons powdered ginger
  • 2/3 cup molasses
  • 1 Tablespoon vanilla
  • 2 cups sugar (fill measuring cup to top)
  • solid shortening
  • Equipment: Pastry blender or large fork
  • flexible spatula to spread batter
  • 9 x 13" cake pan or two 8 1/2" round pans
  • cake tester or toothpicks

Directions
  1. Cream butter and sugar together.
  2. Open each egg into a cup, then beat into butter-sugar mixture one at a time.
  3. Beat in molasses.
  4. Mix together flours or baking powder and 3 cups plain flour.
  5. Beat the flour into the egg-butter-sugar batter a little at a time.
  6. Beat in vanilla and ginger.
  7. Grease the pan or pans with solid shortening, and sprinkle flour over the grease.
  8. Pour in the batter and level it with a spatula, or by shaking the pans.
  9. Bake at 350 degrees F for 40 minutes; test with wire cake tester or toothpick--done when it comes out clean.
  10. Cut into squares and serve.
