Ginger Bread cake

- 3 eggs shopping list
- 1 cup self-rising flour (or 1 cup all-purpose flour and shopping list
- 1 1/2 teaspoons baking powder) shopping list
- 2 cups plain flour shopping list
- 2 sticks softened butter shopping list
- 1 1/2 teaspoons powdered ginger shopping list
- 2/3 cup molasses shopping list
- 1 Tablespoon vanilla shopping list
- 2 cups sugar (fill measuring cup to top) shopping list
- solid shortening shopping list
- Equipment: Pastry blender or large fork shopping list
- flexible spatula to spread batter shopping list
- 9 x 13" cake pan or two 8 1/2" round pans shopping list
- cake tester or toothpicks shopping list
How to make it
- Cream butter and sugar together.
- Open each egg into a cup, then beat into butter-sugar mixture one at a time.
- Beat in molasses.
- Mix together flours or baking powder and 3 cups plain flour.
- Beat the flour into the egg-butter-sugar batter a little at a time.
- Beat in vanilla and ginger.
- Grease the pan or pans with solid shortening, and sprinkle flour over the grease.
- Pour in the batter and level it with a spatula, or by shaking the pans.
- Bake at 350 degrees F for 40 minutes; test with wire cake tester or toothpick--done when it comes out clean.
- Cut into squares and serve.
