How to make it

  • Cream butter and sugar together.
  • Open each egg into a cup, then beat into butter-sugar mixture one at a time.
  • Beat in molasses.
  • Mix together flours or baking powder and 3 cups plain flour.
  • Beat the flour into the egg-butter-sugar batter a little at a time.
  • Beat in vanilla and ginger.
  • Grease the pan or pans with solid shortening, and sprinkle flour over the grease.
  • Pour in the batter and level it with a spatula, or by shaking the pans.
  • Bake at 350 degrees F for 40 minutes; test with wire cake tester or toothpick--done when it comes out clean.
  • Cut into squares and serve.
