Plantain Turnovers

- 3 plantains, (soft to touch) shopping list
- 1/4 cup of sugar shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/2 cup cooked black beans shopping list
- 2/3 cups of vegetable oil shopping list
How to make it
- Wash and cut the plantains into three pieces.
- Boil in some water until soft, drain and mash the plantains.
- Place the beans in a blender and blend until you have a soft puree.
- Fry the beans in a little oil and then add the sugar and cinnamon.
- Heat the remaining oil in another frying pan, add the plantain mixutre, one tablespoon at a time, and spread with a fork to form it into the shape of a small pancake.
- Fry for 3 minutes.
- Place about 1 heaping tablespoon of the bean mixture on each pancake and fold, shaping into a turnover.
- Fry for 3 minutes longer on each side until brown.
