Cranberry Beef Pot Roast Recipe

Ingredients
  • Cranberry Beef Pot Roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • ½ cup mushrooms, diced
  • 1 cup cranberries, cut in half
  • 2 tbsp sugar
  • 2 1/2 lbs boneless top round beef
  • 1 cup cranberry juice
  • 1/2 cup orange juice
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp ground cloves
  • 1/2 cup cranberry sauce
  • 2 tbsp cornstarch
  • 1/4 cup water

Directions
  1. Combine onion, garlic, mushrooms, cranberries & sugar in a 4-quart slow cooker
  2. Trim excess fat from the beef.
  3. Brown beef on all sides in a pan on medium flame.
  4. Place beef on top of onion mixture in slow cooker.
  5. Drain any fat from the pan, then deglaze with cranberry & orange juices.
  6. Bring to a simmer.
  7. Add salt, pepper, and cloves; stir well.
  8. Pour over roast in slow cooker.
  9. Spread cranberry sauce over roast.
  10. Cover & cook on LOW for 8 to 9 hours, or until the beef is tender.
  11. Remove beef & cover with tinfoil.
  12. Combine cornstarch & water in small bowl.
  13. Add the cornstarch mixture to slow cooker.
  14. Cook on HIGH for 15 minutes until thickened,
  15. Serve with the roast.

I have never tried pot roast with cranberries. Sounds wonderful! I will try this on Sunday.
