Directions
  1. Snip off leaf tips of 1 artichoke with shears. Cook it,covered in a steamer insert in large saucepan,about 25 mins.(bring water to boilfirst,then reduce to med. heat.) When cool,pull off leaves and arrange on serving platter. Trim off bottom and the choke and chop heart.
  2. Cook 2oz. of pancetta or bacon in skillet till crisp;add1c bread crumbs and 1/4tsp chopped thyme and cook 2 to 3 mins. more.
  3. Add artichoke heart to pancetta mixture with 1/2 chopped tomato,1/4c mayonaisse and 3 Tbs parmesan cheese. Spoon onto leaves.

Very interesting, pat! My friend's mom always tried to convince me every year at holiday time that I liked artichokes. She never convinced me! The only way I find them edible is in a dip. I give you my five for trying to make me like 'em too!
