Pan Roasted Lime Chicken with Salsa Verde

- 4 boneless,skinless chicken breast halves shopping list
- 1/4 tsp. sea salt shopping list
- 1/4 tsp fresh ground pepper shopping list
- 2 Tbs. olive oil shopping list
- 1 lime,thinly sliced shopping list
- juice of 1 lime(about 2 Tbs) shopping list
- 6 garlic cloves pressed shopping list
- 1/2c dry white wine shopping list
- 1c low-sodium chicken broth shopping list
- 2Tbs. chopped fresh cilantro shopping list
- 1/2c salsa verde shopping list
- Salsa Verde: shopping list
- 1 bunch fresh cilantro leaves shopping list
- 1/4c fresh mint leaves shopping list
- 2 scallions minced shopping list
- 2 garlic cloves,smashed shopping list
- 2Tbs olive oil shopping list
- Zest and juice of 1 lime shopping list
- 1tsp honey shopping list
How to make it
- Sprinkle chicken evenly with sea salt and pepper. Heat oil in large skillet over med-high heat. Add chicken and lime slices and cook 3 to 4 mins or till lightly browned. Add lime juice;turn chicken and cook 3 to 4 mins more. Remove chicken and lime slices to a plate.
- Add garlic to skillet,and cook,stirring constantly,about 30 seconds;add wine,scraping browned bits from the bottom of the pan. . Add chicken broth,cook 5 to 7 mins or till reduced by half. Return reserved chicken,lime slices,and any juices to the pan. Reduce heat to low,and simmer 15 mins. or till chicken is cooked through. Remove from heat;sprinkle with cilantro,and serve warm with Salsa Verde.
- Salsa Verde: Puree all ingredients in food processor until smooth,stopping several times to scrape down sides. Chill,up to 2 days,in an airtight container until ready to serve. Makes 1 cup.
