How to make it

  • combine mint ,vinegar, honey, and a little salt and pepper in a blendar or food processor fitted with the stainless steel blades.
  • blend or process until throughly pureed, stopping once or twice to scrape down the bowl.
  • with the blendar running on low speed or the processor running continuously, slowly drizzle in the olive oil until it is fully incorporated.
  • taste the sauce and , if nessary, adjust the seasonings with a little more salt and pepper.
  • Makes about 1 cup.
