Chilies Rellenos Casserole

I am a big Chilies Rellenos fan and try them at least once in each Mexican Restaurant I visit. Yes I am on a quest to find the perfect Chilies Rellenos! No when I find it I don't kill the cook (Johnny Depp's character in Once upon a Time in Mexico)I did not want to give anyone the wrong idea. Read more Hummm … so where was I? Chilies Rellenos. Johnny Depp, killing cooks……. I got nothing…So imagine how happy it made me to find a recipe that is simple and not so soaked in fat as a "real" Chilies Rellenos. How happy were you? (thanks for asking) If I were any happier there would be two of me. So we have been thinking, no not the royal we, remember I'm so happy there are two of me. It does give me someone to talk to. So being happy is a good thing! Well unless you are around me and I am jabbering away to myself. Then you will edge away from me as you pass by! Ha I remember you now! Ingredients
- 1 4oz can whole California green chilies, seeded shopping list
- 1/3 lb Jack cheese, large chunks shopping list
- 4 eggs shopping list
- 1/3 Cup milk shopping list
- 1/2 Cup flour shopping list
- 1/2 tsp baking powder shopping list
- 1 Cup sharp cheddar cheese - Shredded shopping list
- 1 7oz can green chile salsa shopping list
How to make it
- Divide cheese evenly among the chilies, folding or tucking the cheese inside.
- Butter 1 1/2 quart casserole and arrange chilies side by side in the bottom.
- Beat eggs until thick and foamy and add milk, flour and baking powder.
- Beat until smooth as possible.
- Pour the egg batter over the chilies, moistening evenly the surface of all the chilies.
- Sprinkle with 1 Cup of cheese.
- Bake uncovered for about 30 minutes or until casserole is puffed and appears set.
- Serve with salsa
